How to switch from variable rates to stable rates on v3?

I am currently working with Aave v3 and I am having trouble switching from variable rates to stable rates. I have tried a few different methods but none of them seem to be working.

Stable rate is not available only variable on Aave v3. Thus stable rates are only available on v2 but there also not all tokens can be borrowed stable.
